Instructions

  1. Melt butter in skillet, add onion, saute until soft.
  2. Add quartered mushrooms to the pan and saute over high heat until moisture evaporates.
  3. Sprinkle top with 1 Tbsp. flour.
  4. Add salt, pepper, and cream.
  5. Simmer briefly and then add brandy and sherry.
  6. Correct seasoning as needed and serve.
