Instructions

  1. Boil water.
  2. Steep tea.
  3. Add sugar and stir to dissolve.
  4. Wait until sweet tea cools to room temperature (below 90F). Alternatively, brew a smaller batch of hot sweet tea and add cold water to bring it closer to room temperature.
  5. Put in a loosely covered brewing vessel, with a cloth or coffee filter over the top and ferment for 2 weeks.
  6. To bottle, If adding fruit juice, fill 10-20% of the bottle with juice and cover with kombucha. If adding sugar, start out with 1 teaspoon/4 grams per bottle (450mL/16oz), and adjust based on experimentation.
  7. Let the bottles sit at room temperature for anywhere between 1 and 7 days.
  8. Refrigerate the finished bottles to stop the fermentation process and allow more CO2 to dissolve into the liquid.

Colin's Version

  1. Tea- 6 Tablespoons tea for 3 gallon pot. 2 Tablespoons. each or black tea, oolong and green--A third of each kind.
  2. Boil water
  3. Put the tea in to steep for at least 4-6 hours. Usually I do it just before bed. Towards end of the steep or even after it add 1 cup of sugar per gallon (so 3 cups of sugar for my pot)
  4. Make sure it’s stirred enough to dissolve sugar and transfer to fermenter
  5. For bottling, pineapple juice or 1Tbsp sugar are good
