Potato Leek Soup

Instructions

  1. Peel and quarter potatoes. Clean leeks and rinse thoroughly in cold water, taking time to remove all grit.
  2. Add potatoes and leeks to empty pot and cover in water, and bring to a boil until potatoes are fork tender.
  3. Add salt and puree potatoes and leeks with an immersion blender until smooth.
  4. Add cream.
  5. Adjust salt, add remaining seasonings.
