Grandma Newcomb's Salt Fish Dinner
Ingredients
- Salt Fish- 1 pound. If unavailable, you can salt cod yourself and leave overnight in fridge
- Cream Sauce
- Milk- 1 quart
- Flour- 3 Tablespoons
- Butter- 3 Tablespoons
- Salt, pepper, and bullion if needed
- Fatback or Bacon - 1/2 lb. Cooked very crisp and crumbled
- Potatoes- 4-6 boiled potatoes
- Beets- Cooked and skinned, cut in quarters
Instructions
- Soak fish in water overnight and rinse.
- Boil fish on stove until soft, drain water.
- Make cream sauce by melting 3 tablespoons of butter in a pan, adding 3 tablespoons of flour. Once browned whisk in a quart of milk.
- Bring roux to a boil and add fish.
- Lower to a simmer and adjust salt, pepper, or boullion.
- To serve, plate potatoes and beets. Add butter. Dad likes his beets and potatoes chopped up. Serve fish and cream sauce on top. Add bacon or fatback to top.
