Instructions

  1. Soak fish in water overnight and rinse.
  2. Boil fish on stove until soft, drain water.
  3. Make cream sauce by melting 3 tablespoons of butter in a pan, adding 3 tablespoons of flour. Once browned whisk in a quart of milk.
  4. Bring roux to a boil and add fish.
  5. Lower to a simmer and adjust salt, pepper, or boullion.
  6. To serve, plate potatoes and beets. Add butter. Dad likes his beets and potatoes chopped up. Serve fish and cream sauce on top. Add bacon or fatback to top.
