Uncle Peter's Sweet Potato Pudding
Ingredients
- Sweet Potatoes or Yams- 2 Large
- Creamed Corn- 1 can
- Corn- 1 Can or 2 cups of fresh/frozen
- Cream- 1/4- 1/2 cup- Can substitute full-fat coconut milk
- Nutmeg- A pinch
- Cayenne- A pinch
- Salt- To taste
- White Pepper- A pinch
- Brown Sugar- 1 Tbsp
- Bread crumbs- 1/2 cup
- Butter- 2 Tbsp
Instructions
- Bake unpeeled sweet potatoes at 375 degrees for 1 hour.
- Remove from oven and peel skins.
- Chop sweet potatoes into 1 1-2 inch cubes and place in a casserole dish.
- Drain the canned corn and add corn kernels and creamed corn to dish.
- Add all remaining ingredients except breadcrumbs and butter.
- Cover top with breadcrumbs and dot with butter.
- Bake uncovered at 350 degrees for 30 minutes.
