Uncle Peter's Sweet Potato Pudding

Instructions

  1. Bake unpeeled sweet potatoes at 375 degrees for 1 hour.
  2. Remove from oven and peel skins.
  3. Chop sweet potatoes into 1 1-2 inch cubes and place in a casserole dish.
  4. Drain the canned corn and add corn kernels and creamed corn to dish.
  5. Add all remaining ingredients except breadcrumbs and butter.
  6. Cover top with breadcrumbs and dot with butter.
  7. Bake uncovered at 350 degrees for 30 minutes.
